My brother-in-law’s grandmother is a mad cook. This is her outstanding molasses cookie recipe. Bake them a little less, and they’ll be chewy. Bake them a little more and they’ll have some snap.
1. Beat together butter, sugar, molasses and egg.
2. Beat in remaining ingredients.
3. Chill dough for 2 hours (this is torture).
4. Roll into 1″ balls, then roll in sugar.
5. Bake for about 9 minutes at 375 F.
If you bake them on the longer side, they’ll be a bit crunchier. Not burned, just snappy. If you bake them for 8 to 9 minutes, they’ll be soft and chewy for days.

Made these last night and they are fantastic! Exactly how I wanted them. I didn’t have any ginger on hand so I substituted it with allspice. They still turned out great! Thanks for the recipe!

Made these on the weekend. You’re right, those 2 hours were torture, but licking the beaters all by my self did offer some comfort.
The cookies were delicious! They’re still lovely and chewy a day later, but they’re disappearing fast. A cookie with a scoop of maple pecan ice cream on top made for a delicious dessert last night. I will make these again and again.

These turned out great! After chilling the dough, I formed the balls and rolled them in sugar, then stored them in the fridge to start baking the next day. (I would imagine that the dough would freeze well, but I haven’t tried that yet.) I like my molasses cookies to be chewy, so I used parchment paper to make sure that they didn’t overcook on the bottom. Thanks to Mark’s Grandma!

I was going to post the molasses cookie recipe my mom always used, but this one is exactly the same. So, I can totally vouch for these cookies. They are so delicious! Warm and spicy, perfect for fall weather and holidays. These are total happiness!
