My husband goes through this granola like crazy. As soon as he runs out, he leaves the empty container on the counter until I make him some more. A cheaper and way more delicious option than store-bought granola.
In a large mixing bowl add together dry ingredients, stirring well.
Heat the oil, honey, and vanilla to boiling in a saucepan, then add to dry ingredients.
Mix everything together really well and spread out onto 2 greased or nonstick cookie sheets. Bake for 10 minutes at 325 degrees, then stir and flip and bake for another 5 minutes. I watch mine carefully to make sure it doesn’t burn or get too brown. When it is a nice golden tan color, it is done.
Let it cool, then store in an airtight container. Keeps for weeks.
