Perfect as a side dish or main course! Make sure to use fresh pineapple!
Saute onions in olive oil over medium heat until tender, 3 minutes. Stir in rice and egg. Continue stirring until hot and egg has been cooked and looks scrambled. Stir in remaining ingredients. Remove from heat and spoon into serving bowl.
Serve with my Orange & Hoisin Glazed Pork Medallions (see my recipe box).
