This is a wonderful Italian navy bean soup that used to be served at a local restaurant. They were asked for the recipe by Bon Appetit years ago and this is it. It’s filling and smells wonderful cooking. Serve with a salad and some crusty bread.
Bring beans and water to a hard boil and boil for 15 minutes. Turn the heat down to medium and add remaining ingredients, except for shell macaroni, and continue to boil until beans are soft, roughly 2 hours. You will probably need to add more water; you want to end up with about a gallon of soup. Once the beans are soft, add 1/2 lb. shell macaroni to the soup and cook until done. Add pepper to taste.
Serve with Parmesan sprinkled over the top.
