Sweet whole wheat and oat flour pancakes.
Heat pancake griddle to medium heat, no higher than 300ºF.
Slice the apple into rounds no more than 1/4-inch thick, and remove the bits of core in the center of the slices. Place the apple slices on the hot griddle—several minutes on each side—until they soften but do not become limp. Remove from heat and cut into bite-sized pieces.
In a bowl combine the apple pieces with the remaining ingredients. Scoop batter by the 1/2 cup onto the griddle. Spread out with a fork and sprinkle with cinnamon. Cook until lightly browned on each side. Sprinkle with cinnamon again before serving. Enjoy!
