Simple to make, chock full of veggies and SO delicious your family will seriously scarf it! This makes a ton, so it’s perfect for freezing. Another tip: make up the whole stew without adding the tortellini, then freeze dinner-sized portions in Ziploc bags and add only the amount of frozen tortellini that you need for that bag.
1. In a very large stock pot, saute onion and sausage in olive oil until onions turn clear.
2. Add all other diced fresh veggies and spinach. Saute until tender.
3. Add all other ingredients except tortellini and Parmesan cheese. Rinse the black beans but include the liquid from the other canned veggies. Just toss the frozen chicken breasts in whole. By the time the stew is done simmering, the breasts will be perfectly cooked. Bring to a boil then reduce heat and simmer for at least 1 hour.
4. 20 minutes before you’re ready to serve, add the tortellini and continue simmering.
5. When done, remove the chicken breasts, shred with two forks and return to stew.
6. Ladle stew into bowls, top with Parmesan, and serve with garlic bread or french bread for dipping!

BJ – so glad you enjoyed it! It does make a mountain of stew but at least that means you get to freeze it for whenever you want more! I’m actually thawing a bag of it right now for dinner tonight!

I rushed home last night so that I could make this for the hubby and myself, have been trying new receipts from this site the last few weeks. It made a ton for 2 people, but we both thought that we had died and went straight to heaven. What a wonderful, flavorful delight. This “stewp” because it is soooo thick and robust is a must add to the receipt box and one to make and take to family game nights with the whole family. It will be that big surprise, never had before, magic card.

Oh yes, it makes a TON! I took my best guess on the number of servings, but you don’t want to only use part of a can of veggies or half a zucchini so you’ve got to go all in! Glad you enjoyed it!

Started making this without noticing the number of servings. It was awesome. I highly recommend making the whole amount and freezing some or feeding your friends. Rave reviews from everyone who tasted it!
