Peanut butter lovers, get ready.
Preheat oven to 375F.
Cream together butter and sugars in a large bowl until fluffy. Add eggs, one at a time, beating well after each addition. Blend in 1 cup of peanut butter and 1 teaspoon vanilla.
Mix together flour, baking soda and salt. Stir into creamed mixture. Form dough in 1-inch balls. Place on a greased cookie sheet 2 inches apart. Flatten with a floured fork to make “hatches.” Bake for 8 minutes or until brown.
To make the frosting, mix 1/2 cup peanut butter, 4 tablespoons milk, 1 teaspoon vanilla and 3 cups powdered sugar.
Spread frosting on the bottom of a cooled cookie, then top with another cookie. There you have it – a peanut butter cookie sandwich!

Oh my! These are awesome! The cookie turned out perfect and the filling pushed it over the top. My husband loves these too. I can only eat one because they are so sweet but is it two? I dont know and dont care. Did I mention how good these are?
This recipe makes so many that I froze half of them for later.

Okay, so here’s the deal. My dad loves peanut butter. I mean he LOVES it. He puts peanut butter on every other cookie he has. So I tried to find a good peanut butter cookie recipe for him. This is PERFECT!! I made them for him this afternoon and he thought they were awesome!! I thought they were so easy to make and they turned out perfect. I got about 40-45 cookies, so it made about 20-22 sandwhich cookies. I also thought they were delicious and am planning on making them all the time. So thankyou for sharing a winner!!
