A curry so simple and yet very tasty.
Chop the onion and fry it with the garlic and ginger in a hot pan. Add the cinnamon sticks to the onion mix while it is cooking.
Next, add the spices, salt and pepper and chopped tomato to the mix. Once it is blended, add the lamb to the frying pan. Mix with the spices and onion.
Transfer the mixture to a casserole dish and bake (covered) in a 300ºF oven for 1 1/2 hours.
Serve over basmati rice with a salad.
