Description

Little cookies for little hands. Or a handful of cookies for big hands. They’re small, so you get to eat more!

Ingredients

  • ½ cups Butter, Softened
  • ½ cups Crisco (or Other Vegetable Shortening)
  • 1 cup Brown Sugar
  • ¼ cups Sugar
  • 1 box (3.4 Oz. Size) Instant Vanilla Pudding
  • 2 whole Eggs, Slightly Beaten
  • 1 teaspoon Vanilla
  • 2-½ cups Flour
  • 1 teaspoon Soda
  • ½ teaspoons Salt
  • 2 cups Chocolate Chips

Preparation

Preheat oven to 375ºF.

Cream butter, shortening and sugars. Beat in pudding until blended. Add eggs and vanilla, beat until combined.

Sift dry ingredients and blend into mixture. Add chocolate chips and mix only until evenly distributed.

Roll 1-tablespoon balls of dough and place on baking sheet. Bake at 375ºF for about 10-11 minutes. Test a couple of cookies to determine the best cook time for your preference. 10 minutes will yield a chewy cookie, 12 minutes will yield a crisp cookie.

Note: the Pampered Chef 2-tablespoon scoop is handy. Divide a scoop of dough in half and roll.

Recipe makes about 90 mini cookies.

Very good! I used Whole Wheat Pastry Flour (so I feel a little bit better about my kids eating them!) and only had butter flavored Crisco, but it worked wonderfully. Thank you for the recipe.
