Quick, easy, and moist. Keeps well for several days. Oh, and addictive too! You can use any other type of cake mix for various kinds of cookies.
Pour cake mix into a large bowl. Stir in eggs, oil, and lemon extract until well belended. Drop teaspoonfuls of dough into a bowl of confectioner’s sugar. Roll around until lightly covered. Drop onto cookie sheet. Bake for 6 to 9 minutes in a preheated oven at 375 degrees F.
