These are my grandson’s favorite cookies. They have CHOCOLATE on them!
1. Preheat oven to 350 F. In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Beat in oats and coconut.
2. Roll into 1″ balls. Place 2 inches apart on ungreased baking sheets, flatten slightly. Bake at 350 F for 10 to 12 minutes or until lightly browned. Break each candy bar into 12 pieces and press a chocolate piece into center of each warm cookie. Remove to wire racks to cool.

ahhh, you named these after our sweet boy. we love these cookies, especially if made with vanilla bean paste. they are so yummy! any chocolate lover will enjoy these.
