Perfect for a busy night!
Brown ground beef and onion in a large pot. Season with salt and pepper. While the meat is browning, pour the tomatoes into the blender and blend for 5 seconds or so. Pour tomatoes into the browned beef and onions. Stir. Add both cans of Veg-All (liquid and all). Stir. Simmer for a bit. Done! Season with salt and pepper to taste.
This can be served with cornbread muffins crumbled into the soup or crusty garlic bread for dipping. This recipe makes a ton and freezes beautifully!
