Light, buttery, flaky bites of spring! Kids will love rolling the dough into balls and it’s so fast and easy, what’s not to love!
Preheat oven to 350ºF.
Cream butter and sugar together. Add the vanilla extract.
Once the vanilla is mixed in slowly, add the flour until your dough comes together.
Roll the dough into 1.5-inch balls and place on an ungreased cookie sheet. Press your thumb down in the middle to make a hole.
I baked them just like that for 14 minutes, let them cool completely and then added the lemon curd into the indentation in the cookie. Sprinkle lavender, poppy seeds, or chopped candied ginger on top. Makes 3 dozen.
Devour.
