Chewy oatmeal cookies, spiced with cinnamon, cloves, allspice, ginger, and nutmeg. Great for winter holidays.
With a mixer, cream the shortening, butter, granulated sugar, and brown sugar. Add in the eggs and vanilla and beat well.
In a separate bowl, whisk the flour, salt, baking soda, cinnamon, cloves, ginger, allspice, and nutmeg.
Stir dry ingredients into wet mixture, until just combined. Fold in the oatmeal.
You could also add any or all of the following: raisins, chocolate chips, nuts, dried cranberries, etc. Use your imagination!
Mix well. Spoon onto a greased cookie sheet or parchment paper and bake at 350ºF for 10 minutes.

My only suggestion for this recipe is DOUBLE IT; they won’t last! These cookies are wonderful, gooey and chewy as well as subtly spiced.
