My 3 favorite things all wrapped up in one cute package!

Ingredients

  • 1 cup All-purpose Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ¼ cups Granulated Sugar
  • ¼ cups Brown Sugar
  • ¼ cups Canola Oil
  • ¼ cups Smooth Peanut Butter
  • 1 whole Egg
  • 2 whole Very Ripe Bananas, Peeled And Mashed
  • 1 teaspoon Vanilla Extract
  • ½ cups Chocolate Chips

Preparation

Preheat oven to 325ºF. Spray 6 mini loaf pans with nonstick cooking spray and set aside.

In a large bowl, whisk all dry ingredients together until combined: flour, baking powder, soda, salt, cinnamon and sugars. Create a well in the center and pour in remaining ingredients, excluding the chocolate chips. Mix until just combined.

Stir in chocolate chips. Divide evenly between loaf pans and bake 20-25 minutes or until a toothpick comes out clean when inserted. Cool 5 minutes in the pan and remove to cooling racks. Serve warm or at room temperature.

I made this recipe for my students, and they loved it so much I actually didn’t get a chance to try any! I guess I have to make it again. :)

Very easy to make and they turned out great. The perfect combination of PB, Banana and chocolate chips. I am always looking for more ways to use up my over-ripe bananas. Thanks for the recipe!
