A comfort breakfast! Very creamy, thick, and hearty.
(I usually grind my own wheat, which lengthens the prep time. I keep a big bag of ground wheat in the fridge ready for use.)
Bring milk and salt to almost a boil in a heavy saucepan. Do not boil the milk; heat just until there are bubbles around the edges.
Carefully pour in wheat while stirring with a whisk to prevent lumps. Cook over low heat for 15-20 minutes or so until thick, stirring occasionally. Add vanilla and sugar to taste.
You can add in any mix-ins that sound good – raisins, brown sugar, cinnamon, chopped nuts, chopped apples or peaches or figs, etc.

I make a similar preparation although I add the wheat to the milk while it is still cool in the pan. In my opinion, it makes it much easier to combine and avoid any chance of lumps from the very beginning.
This is truly cool weather comfort food to start the day off right. No need to pay extra for the ready-made, prepackaged wheat cereals…
