Description

Had the ingredients on hand on a cold winter day, so I threw this together. It’s a rib sticking recipe.

Ingredients

  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Butter
  • 2 packages Kielbasa Rings, 16 Ounce Packages, Cut Into Bite Sized Pieces
  • 2 cups Sliced Carrots
  • 2 stalks Celery, Chopped
  • 1  Large Onion, Chopped
  • 1 clove Garlic, Minced
  • 2 whole Shallots, Minced
  • 4 cups Shredded Cabbage
  • 1 can (15 Oz.) Tomato Sauce
  • 1 can (10.75 Oz.) Tomato Soup
  • 1 can 14 Oz Sauerkraut Drained
  • 1 can 14 Oz Drained Kidney Beans
  • ½ cups Parsley
  • 1 teaspoon Thyme
  • 1 teaspoon Dried Celery Flakes (optional)
  • 1 teaspoon Herb De Provence
  • 1 dash Red Pepper Flakes
  • 1 dash Salt And Pepper, to taste

Preparation

1. In a large Dutch oven, heat oil and butter. Add kielbasa and brown lightly over medium high heat. (You will get a lot of liquid, drain off at least half or more – then continue browning). Once browned, remove kielbasa from the pan and set aside.
2. Add carrots, celery, onion, garlic and shallot, saute till tender.
3. Add remaining ingredients except kielbasa, bring to boil then add kielbasa.
4. Stir and reduce heat, cover and simmer till veggies are tender.
5. Cook for at least 2 hours.
