A chewy oatmeal cookie with a toffee crunch. Makes about 3 dozen. Use the toffee chips coated in chocolate for extra goodness.
1. Beat first 5 ingredients until light and creamy.
2. Sift together the flour, salt and baking soda and mix into the creamed mixture.
3. Add oats, toffee chips and nuts and mix together.
4. Chill dough for about 30 minutes. Then drop by teaspoonfuls onto a cookie sheet.
5. Bake at 350 degrees for about 8 minutes.
6. Cool slightly on a cooling rack before eating. Toffee chips will be hot!

I can hardly wait to make these – I love anything toffee and the oatmeal makes this healthfood……right??
