A tasty side dish for bean lovers! It puts the supermarket can version to shame!!
In a medium saucepan, heat one tablespoon of olive oil over medium heat. Add the diced onion, minced garlic, and salt and pepper to taste. Cook until onions are translucent (about 10 minutes). Then add the drained and rinsed pinto beans, chili powder, cumin, and Mexican oregano. Stir to combine, making sure the spices completely coat the beans. Next add the chicken stock and BBQ sauce and stir to combine. Bring the beans to a boil. After the beans come to a boil, cover and reduce heat to medium low. Simmer for 45 minutes, stirring occassionally. After 45 mintues, the liquid will have reduced by half, leaving a small amount of sauce. If less sauce is desired, then uncover and continue to simmer 5-10 more minutes. Serve hot and enjoy!
