The goodness of a yellow cake topped with chocolate frosting in a new and portable form. It’s a cake-like cookie with a rich chocolate frosting that isn’t too messy. Perfect for mailing to Mom on her birthday!
Preheat oven to 350F (a little lower if using convection).
Cookies (the first 8 Ingredients):
1. Sift together both flours salt and baking powder into a large bowl and set aside.
2. Cream butter and sugar together until light and fluffy.
3. Add one egg at a time, allowing each egg to be mixed in before adding the next.
4. Throw in the vanilla and mix until incorporated.
5. Prepare a baking sheet either using parchment paper (works great) or some other nonstick agent.
6. Drop rounded tablespoonfuls of batter onto the baking sheet.
7. Bake cookies for 10 minutes or until golden around the edges.
Frosting (last 5 ingredients):
1. In a double boiler, melt the chocolate squares and butter together.
2. Remove from heat and add powdered sugar (you’ll notice small round balls of sugar and chocolate forming).
3. Add in vanilla.
4. Slowly add milk in, one teaspoon at a time, until desired frosting consistency is reached.
5. When cookies are completely cooled, generously frost the top of each cookie.
