Description

Ya can’t go wrong with minestrone. Unless you dumped like manure in it. But you wouldn’t do that. Try this!

Ingredients

  • ¼ cups Olive Oil
  • 1 whole Red Onion, Chopped
  • 3 cloves Garlic, Minced
  • 3 whole Carrots, Diced
  • 2 whole Celery Stalks, Diced
  • ½ teaspoons Crushed Red Pepper
  • 1 whole Red Bell Pepper, Diced
  • 2 teaspoons Fresh Rosemary
  • 1 teaspoon Coarse Salt
  • 1 teaspoon Freshly Ground Pepper
  • 3 whole Large Tomatoes, Chopped
  • 4 whole New Potatoes, Diced Into 1-inch Chunks
  • ¼ heads Green Cabbage
  • 1 can (15 Oz. Size) Cannellini Beans, Drained And Rinsed
  • 4 cups Water, Or More As Needed
  • 1 cup Broccoli Florets
  • 10 leaves Basil, Torn
  • ½ cups Fresh Parmesan Shavings, For Serving

Preparation

In a large pot, heat the oil over medium-high. Add the onions, garlic, carrots, celery, crushed red pepper, red bell pepper, rosemary, a good pinch of salt and pepper. Cook about 8 minutes, until veggies start to soften.

Then add the tomatoes and cook them down, about 3 minutes. Add the potato, cabbage, beans, and 4 cups of water. Bring to boil, reduce heat and simmer for about 20 minutes.

Taste and season accordingly. Add the broccoli and toss in most of the basil and stir to combine. Cook 1 more minute or until broccoli reaches your desired texture.

Serve soup with more basil and parmesan cheese for garnish.

I have made this soup 2 times now and it has been great both times. I did make a few tweaks on my own, but nothing too drastic. The flavor of mine was enhanced a bit by the tomatoes I used. They were canned with roasted garlic and sweet onion. It does thicken with time, so more liquid (broth or tomato puree) was needed to dilute, but overall a good soup!

I made this soup exactly per recipe. It was lacking flavor. The liquid was only water and for the short time it cooked, the vegetables did not flavor the water. I had to add a lot of chichen bouillon to help it out and let it sit in refrigerator for 2 days to flavor it. There was only 4 C water for all of the veggies and I had to add a lot more and it still didn’t look like the photo which had ample broth. I wonder if there was a typo in the recipe.
