Oatmeal cookies with everything added: raisins, Craisins, coconut, nuts, whatever you have in the cupboard that sounds good in a cookie.
Cream the butter and sugars until it lightens a little in color and the sugar starts to break down. Add the Kahlua or vanilla extract at this point and continue to beat. (I love my Kitchen Aid for this, just dump in the stuff, turn on and walk away for a couple of minutes). Then add the eggs, one at a time and let them incorporate. The eggs will also help to break down the sugar granules. Add in the oats, salt, flour and baking powder a little at a time, until it’s all added in.
At this point I usually divide the dough in half and add the chocolate chips to one half of the dough, make a roll with it and put it into the fridge to cool down. When cool, slice it and bake the slices of cookie. Or freeze the roll and bake it later on. To the other half of the dough, add the dried fruit, nuts and coconut. Make this into a roll and place in the fridge to firm up. Cut into slices and bake.
Bake for 12-15 minutes in a 350 degree F oven.
Try not to burn your mouth when biting into the cookie when you take them out of the oven. Try toasting the walnuts and coconut a little before adding to the dough, it adds a lovely layer of flavour as well.
