This recipe for mint pesto is beautiful, summery and perfect to add to lamb chops, burgers, steaks, or any dish that needs a little brightening.
Blend all the ingredients in a small food processor or chopper until smooth. If not using immediately, store in the refrigerator with plastic wrap completely covering and touching the surface of the pesto to prevent oxidization, or in a tightly sealed mason jar. Makes 2/3 cup.
