Description

Sweet and delicious blueberry malted waffles are the perfect summer breakfast.

Ingredients

  • 1-¾ cup All-purpose Flour
  • ½ cups Malted Milk Powder
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 whole Egg Yolk
  • 1-¾ cup Buttermilk
  • 1 Tablespoon Canola Oil
  • 1 Tablespoon Vanilla Extract
  • 2 whole Egg Whites
  • 2 Tablespoons Sugar
  • ½ cups Blueberries
  • Optional Garnish: Confectioners Sugar

Preparation

Preheat waffle iron. Preheat oven to 200°F.

Whisk flour, malted-milk powder, baking powder, baking soda and salt in a mixing bowl. Whisk egg yolk, buttermilk, oil and vanilla in a medium bowl. Whisk the buttermilk mixture into the dry ingredients until just moistened.

Beat egg whites in a clean bowl with an electric mixer until soft peaks form. Gradually add sugar, beating until glossy but not dry. Whisk one-quarter of the beaten whites into the batter, then fold in the remaining whites.

Lightly coat the waffle iron with cooking spray. Spoon in the batter, sprinkle with blueberries, close the lid and cook until waffle is crisp and golden (follow manufacturer’s instructions). Transfer the cooked waffles to the oven to them keep warm. Repeat with remaining batter, lightly coating iron with cooking spray each time, if necessary. Dust waffles with confectioners’ sugar before serving, if desired.

Delicious! Substituted pie filling blueberries so I could swirl them into the batter, and used extras to make a blueberry syrup. The malted milk powder was a surprising touch in a buttermilk batter but I really loved it.
