Longest title ever, shortest directions! These are gluten-free as long as your oats are gluten-free.
Preheat oven to 350ºF.
Combine all ingredients except chocolate chips in a large bowl and blend well. Stir in chocolate chips.
Drop onto a parchment paper-lined cookie sheet and bake for 12-14 minutes, until light brown on the bottom. You want them to be slightly soft so they stay chewy.
Let cool slightly before removing to a rack to cool completely. Makes about 2 dozen cookies.
