A family recipe dated back to 1852, with a modern adaptation. These honey cookies are not too sweet and wonderfully chewy. Enjoy with a cup of tea or coffee!
In a saucepan, heat honey, sugar, butter, salt, and spices. Bring to a boil and remove from heat. Let cool.
Beat eggs and add to the cooled honey mixture with the sour cream.
Add the baking soda and flour to the honey mixture. Stir.
Put in the refrigerator for 15-20 minutes so that the dough hardens some.
Drop by floured teaspoonfuls onto a greased cookie sheet.
Bake at 300ºF for 14 minutes.
Note: Take the cookies out before they are brown; they’re great chewy! And the cookies aren’t very sweet, so I dusted some cinnamon sugar over the tops when I took the cookies out of the oven.
