The easiest and quickest way to make a tasty potato soup.
In a large pot, bring two cups of the chicken broth to a hard boil. Once boiling, add the refrigerated mashed potatoes a little at a time. Make sure that the potatoes dissolve before adding more.
Reduce heat to simmer and continue stirring. Add remaining chicken broth until your desired consistency is reached.
Add one package of shredded Cheddar Cheese and allow to incorporate into the soup. Add salt and pepper to taste.
Serve with extra cheese, bacon crumbles and chopped green onions for topping.
