Also called Mexican Wedding Cookies. These bite size cookies are full of buttery goodness. Great on their own, even better paired with a cup of coffee or hot chocolate.
Preheat oven to 350ºF. Line cookie sheets with parchment paper.
Cream butter and powdered sugar until smooth. Stir in vanilla. Combine flour, salt and cinnamon. Stir into the creamed mixture to form a stiff dough.
Shape dough into 1-inch balls.
Mix 1 cup of powdered sugar with 1 teaspoon cinnamon together in a shallow bowl. Roll dough balls in the mixture.
Bake for 18–20 minutes until brown. Cool on a wire rack.
Please note that up here in Canada we call powdered sugar/confectioners sugar by a different name. We call it icing sugar. Apparently, all are the same—go figure!
