A quick dinner or breakfast option!
Slice polenta thinly. Heat 1–2 tablespoons of olive oil on the stove and fry polenta on each side for a few minutes until browned.
While polenta is frying, cook the asparagus in the oven. Simply place in a pan with some olive oil, salt and pepper and cook at 350ºF for about 20 minutes.
Finally, once everything else is cooked, make your egg! You can make it anyway you like.
Enjoy.

Thank you for the reply! Unfortunately there’s no Trader Joe’s here, but I’ll be on the lookout for polenta logs now!

Hi! I buy it in I guess “log” form from Trader Joes (it looks like a long thick circle) so then I just slice it thin. I have only seen it this way at Trader Joe’s, so hopefully you have one near you? Thanks for the lovely comment

Just one question: I know polenta as a kind of corn meal. I didn’t know it came sliceable. Do you buy it like that or do you make some form of sliceable polenta from corn meal and … water, maybe? Thank you!
