Description

These have a texture more similar to a muffin instead of a cupcake- so you can leave off the frosting and call it breakfast. Right?

Ingredients

  • FOR THE CUPCAKE:
  • 1 cup Butter, Softened
  • 1-¼ cup Sugar
  • 5 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 2 whole Oranges, Zested
  • 3 cups Flour
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Salt
  • ½ cups Milk
  • _____
  • FOR THE FROSTING:
  • 1 cup Butter, Softened
  • 5 cups Powdered Sugar
  • ½ cups Orange Crush Soda
  • ½ teaspoons Orange Flavored Extract

Preparation

To make cupcakes, preheat oven to 350 degrees F. Beat butter and sugar until fluffy. Add eggs, vanilla and zest of 2 oranges. Add flour, baking powder and salt. Add in milk.
Fill muffin cups 2/3 full (I use paper cup liners). Bake for about 20 minutes.

Meanwhile to make frosting, beat butter until fluffy. Add in powdered sugar, orange Crush and orange extract. Beat for about 4-5 minutes. Frost cupcakes when cooled. Enjoy!

I made these little treasures for a cupcake swap! They were a HUGE hit! I ended up making almost 100 of the mini cupcakes and they were all gone! Definitely perfect for a summer BBQ with the fresh citrus flavor!
