Start your morning with the flavor of the delicious cookie: a coconut macaroon.
Preheat oven to 350ºF. Combine the oats, coconut and salt in a large bowl. Combine the oil, milk, and extracts in a small bowl and combine until mixed. Add the wet ingredients to the dry ingredients and stir until combined.
Spray a baking sheet lightly with cooking spray. Spread the granola evenly on the baking sheet. Bake for 10 minutes and then remove the pan from the oven to stir the granola, mixing it up well so that it is baked evenly. Bake for another 10 minutes or until golden brown and the coconut is toasted.
Store in airtight containers.

This was really good. I think I needed to toast it a little longer because it was moist enough to smush together. I accidently used a 14 oz can of condensed milk, so I had to double the recipe. That turned out very good because my girls and husband couldn’t keep out of it. He recommended putting it in a bowl and sprinkling chocolate chips on it, heating it and covering it with ice cream. Thank you for a new granola recipe!
