In honor of St. Patrick’s Day, here is a hearty Corned Beef Soup to serve with perhaps Irish Soda Bread?
Pour the water into a 3-quart stock pot. Add salt, onion and potatoes. Bring to a boil and cook 15 minutes.
Add tomatoes and Worcestershire sauce. Cook 5 more minutes until thickened. Add corned beef and let cook until it has fallen apart.
