Description
In honor of St. Patrick’s Day, here is a hearty Corned Beef Soup to serve with perhaps Irish Soda Bread?
Ingredients
- 2 cups Water
- 1 Tablespoon Salt
- 1 whole Medium Onion, Diced
- 4 whole Red Potatoes, Cut Into Bite Size Pieces
- 1 can (15 Oz. Can) Diced Tomatoes, Undrained
- 1 Tablespoon Worcestershire Sauce
- 1 can (12 Oz. Can) Corned Beef, Broken Into Chunks
Preparation
Pour the water into a 3-quart stock pot. Add salt, onion and potatoes. Bring to a boil and cook 15 minutes.
Add tomatoes and Worcestershire sauce. Cook 5 more minutes until thickened. Add corned beef and let cook until it has fallen apart.
