Chewy, gooey cookies made from a CAKE MIX? Shut the front door!
Preheat your oven to 350ºF. In a mixing bowl, combine the dry cake mix, eggs, melted butter and vanilla extract. This will start out very dry and take several minutes of hand mixing to get it to come together. I recommend using a heavy-duty wooden spoon, because this dough will be very thick. Once it’s mixed together, stir in the chocolate chips, marshmallows and pecans. Using a cookie scoop or your hands, place golf-ball size dough balls onto cookie sheets lined with silicone baking mats or lightly sprayed with cooking spray.
Bake at 350ºF for 14-15 minutes. Remove from the oven and cool on the cookie sheets for at least 20 minutes to allow the marshmallows to cool and set. If you rush taking them off the cookie sheets, the marshmallows will be very sticky and the cookies may fall apart.
This recipe makes approximately 30 cookies. One last suggestion: make sure you have milk in the fridge before you mix these puppies up. Or a cup of coffee. Or a Slim-Fast.

NanaBread, you may be right about the oven temp. I did cook them for 14 minutes. Of coarse, the drier exterior didn’t stop us from eating every one.

I wonder if your oven may get hotter than mine. The outsides of mine were not dry at all. They were soft and chewy. If you ever were to attempt these again, you might try reducing the baking time to 10-12 minutes. Thank you for trying them, and for taking the time to write a review. -NanaBread
