After not being able to find a recipe for cheese soup that pleased me, I finally just created my own! It was a hit! My daughter loves it! My DH still wants me to add beer to it…uh, nope! Not gonna happen!
In large stock pot, bring to boil the chicken stock. Add carrots, celery and garlic powder. Simmer until celery is fairly transparent and carrots are mushy soft. Add heavy cream slowly while stirring constantly. Add Velveeta. Stir until melted. Add cheddar 1 cup at a time until melted.
Simmer for approximately 30 minutes. Add salt and pepper to taste. Stir occassionally so that cheese does not burn on the bottom.
If soup is not thick enough, add more cheese or make a milk and cornstarch slurry to add to soup.
