Description

Simple, flavorful recipe using ground beef or whatever you have on hand. The only stew my husband will eat!

Ingredients

  • 1 pound Ground Beef
  • 2 Tablespoons Butter Or Margarine
  • 1 whole Medium Onion, Diced
  • 1 clove Garlic, Diced
  • 2 cups (or Cans) Chicken Broth
  • 1 cup Water
  • 1 cup (or Up To A 12 Oz. Bottle) Beer (optional)
  • 1 can (14.5 Oz. Can) Diced Tomatoes With Liquid
  • 1 can (6 Oz. Can) Tomato Paste
  • ½ Tablespoons Dried Parsley
  • ½ Tablespoons Thyme
  • 1 teaspoon Salt And Pepper, More Or Less To Taste
  • 4 whole Russet Or Large Red Potatoes, Peeled And Diced
  • 4 whole Carrots, Peeled And Diced
  • 1 can (15.25 Oz. Can) Corn, Drained

Preparation

Brown ground beef in a large pot, drain and set aside.

Melt butter in the pot on medium-high heat, add diced onion. Cook until soft and slightly brown, 3-5 minutes. Add garlic. Cook about 1 more minute.

Add chicken broth, water and beer (optional). Add diced tomatoes (with liquid) and tomato paste. Add parsley, thyme and salt and pepper. Stir until combined. Add potatoes, carrots and beef.

Reduce heat and simmer approximately 20 minutes or until potatoes and carrots are soft. Add corn and remove from heat. Serve with corn bread.

I’m going to try this. It seems like a lot of Thyme to me. Should it be 1/2 teaspoon? The reason I ask is because I make a hamburger soup that’s very similar to this and it uses 1/2 teaspoon. TIA! :)
