If you like banana bread and cream cheese frosting…you will LOVE these. While I was a baker for a restaurant I was always “playing” with new recipes. And we seemed to always have bananas on hand. Of course my love for cream cheese frosting had to play a part. Grab a glass of milk and enjoy!
Preheat oven 350F.
In a mixing bowl cream together margarine, sugar and brown sugar. Add eggs and vanilla.
Sift all dry ingredients together and set aside.
Mash the bananas using a fork. Add the sour cream to the mashed bananas. Stir together.
Pour sour cream mixture in with the creamed sugar, beat together on low for 2 minutes. The mixture will be very thin. Add half of the dry ingredients, mix well. Put in last of the dry mixture. Beat until well mixed. The batter should resemble a muffin batter.
Using a cookie scoop, place 9 cookies to a parchment lined cookie sheet. Bake for 14 minutes. When done, the edges should be golden brown. Let the cookies cool for about a minute, then take off sheet. (This will make it so the cookies wont “tear” off the paper. This is a very moist cookie.)
Make a sandwich by filling with a Cream cheese frosting.
I wrap them in individual pieces of plastic wrap, to keep them soft. But either way they never stay around long enough to matter.
