Description

You should know that these are not intended to be your normal ‘buckeye’ peanut butter ball. Instead, these are a great, healthy addition to breakfast (think extra protein!) or an excellent after-school snack.

Ingredients

  • 1 jar Natural Peanut Butter (Just Peanuts And Salt, No Sugar. ) 16oz
  • 1-½ cup Dry Milk Powder
  • ½ cups Rolled Or Quick Oats (Whizzed In Food Processor Or Blender.)
  • ½ cups Honey
  • ½ cups Sliced Almonds (Optional) Finely Chopped In Food Processor Or Blender.
  • ½ cups Raisins Or Other Dried Fruit, Finely Chopped (optional)

Preparation

Add all ingredients to a medium bowl and blend with an electric mixer. (Of course, you could use a Bosch or Kitchen Aid). Using a small cookie dough scoop, scoop out and place on a cookie sheet lined with wax paper or Silpat liner and freeze for 20-30 minutes, until firm. (Cook time is freeze time.) Place in an airtight container and store in refrigerator or freezer. Makes approximately 25-30 peanut butter balls, depending on the size.

These could easily be dressed up with some chocolate, but we choose to keep them relatively healthy for breakfast purposes. We’re not big fans of raisins, but like dates! Very good, and surprisingly addictive.

These are wonderful! I made them last night to take with us camping this weekend and I could hardly keep my husband out of them! Very easy and quick to make. Thanks for sharing!

I tried these today and while mixing them up I thought these things are going to be awful. I left out the raisins because my husband doesn’t like them and the nuts because he can’t eat them. They were still delicious! I rolled mine into logs instead of balls. I could see dipping one end in melted chocolate, but I really like them as they are. I will definitly make them again.
