A recipe from a cookbook we put together in 7th grade cooking class over 40 years ago! You can make these ahead of time and add nuts, chocolate chips, etc.
Mix butter, sugar, egg, and vanilla thoroughly with an electric mixer or by hand. Measure and mix flour, salt, and soda together in a separate bowl. Gradually add to the butter mixture. Add nuts or other desired additions last.
Mold dough into two rolls, each about 2 inches in diameter. Wrap in waxed paper and chill (or freeze).
To bake, preheat oven to 400F. Slice cookies about 1/4 inch thick. Place on a baking sheet and bake 8-10 minutes.
Makes about 3 dozen.
