Great for those cold days, this is simple and simmers a good part of the day so you will enjoy the wonderful smell until dinner.
In stock pot add vegetable oil and all the chopped veggies. Cook on medium heat for about 10 minutes. Add turkey carcass, water and all the seasonings (not the rice yet). On medium heat, simmer for 3 hours. During the simmering, the broth will reduce; if needed, add more water.
Take turkey carcass out, let cool, remove all meat from carcass and chop then return to the pot. Add rice and simmer for another 30 minutes or until rice is just done. I serve my homemade favorite bread with this but you could do biscuits or whatever you like. Enjoy.
