I really wanted baked potato soup but did not have the time to make it from scratch. This is quick easy and tasty.
Scrub potatoes, pierce with a fork and microwave until cooked through, about 5 to 10 minutes depending on your microwave. Remove and put in the fridge to cool until you can handle them.
In a large pot, bring water to a boil and stir in instant potatoes. Remove from heat, stir in milk, and return to medium low heat. Dice cooked potatoes, add to the soup, and heat through. Add salt and pepper to taste. Serve warm and top each serving with bacon, cheese, and diced green onion.
I prefer loaded baked potato-flavored instant potatoes.
