Chocolate Chip Biscotti. A great cookie for the holiday.
Preheat oven to 350°F.
Here’s what you’ll need: baking sheet, oven temperature at 350 degrees. You’ll be baking these for 50 minutes.
In a mixer, combine sugar, flour, baking powder and salt, and mix well. Add the butter and vanilla and mix until the mixture resembles coarse meal.
Beat the eggs lightly and add to the dough until evenly moistened. Fold in the chocolate chips until mixed throughout.
Turn the dough out onto a lightly floured surface. Form two 8″ long x 4″ wide logs on the baking sheet.
Bake until dough sets, about 30 minutes. Cut dough on the diagonal into 1/2-inch slices; place cut side down on the baking sheet and bake for an additional 20 minutes at a reduced oven temperature of 275 degrees.
Cool on wire racks. These will last for up to two weeks in an airtight container.

Just bought some much needed items to make coffees with the espresso machine…these will go with my coffee perfectly! Can’t wait to try them.
