These cookies were inspired by the bourbon butter at The Pit, a barbecue restaurant in Raleigh, NC.
Beat the butter, sugar, salt and bourbon together until smooth. Mix in the egg yolk. Add flour.
Turn the dough out onto a lightly floured board and knead, adding more flour if needed, until the dough comes together.
Roll into a log and wrap with plastic wrap or waxed paper. Refrigerate for a few hours or overnight until solid.
Preheat your oven to 325 degrees (F). Line a baking sheet with a Silpat or parchment paper (they don’t tend to stick, but when they do it is impossible to get them off the baking sheet in one piece). Cut the log of dough into approximately 1/8-inch slices. Place the slices at least 1 inch apart on the cookie sheet.
Bake until golden around the edges, approximately 15 minutes. Let cool on cookie sheets.
Optional Bourbon Glaze:
Combine powdered sugar, bourbon, vanilla and cream. Thin mixture with additional bourbon to taste. Drizzle or spread the glaze over cooled cookies.

i used a little orange zest in the glaze… heaven!
