These are my Grandma Frances’ fabulous oatmeal cookies. These have always been a family favorite. We used to have to make a double-batch every few weeks when we were kids, then we’d have to put 3 cookies in a Ziploc bag and they’d go in the freezer for my Dad to take in his lunch bucket every day. They’re actually the best straight out of the freezer, especially if they’re just ever-so-slightly undercooked for chewiness!
Cream sh0rtening and sugars with electric mixer. Add eggs and vanilla and mix well. Add flour, salt, baking soda, baking powder and cinnamon and mix until combined. Stir in oats by hand.
Bake at 350 degrees (F) for 8-10 minutes until golden, but not too brown. We have always loved them just slightly undercooked, leaving just a hint of gooey-ness in the middle! These freeze well!
