These pineapple Jell-O rings are a Thanksgiving tradition from my husband’s side of the family. Despite all the elaborate dishes I make, pineapple Jell-O rings are always the biggest hit with my kids and husband. They are really easy to make.
1. Drain the pineapple juice from the can of rings.
2. Prepare one package of Jell-O with half of the water called for on the box. (This will total one cup of water.)
3. Pour the prepared Jell-O into the can of pineapple until it covers the top ring.
4. Cover and refrigerate overnight.
5. Set the can down in warm water for about thirty seconds. I usually run a knife along the top edge to separate the Jell-O from the can. Invert the can and shake out. If you prefer, when you invert the can you can use a can opener to open the bottom of the can and push the Jell-O out. Slice the Jell-O into individual rings and serve. It looks very pretty to alternate red and green rings.
Tips:
This is a good cranberry relish substitute for people who do not enjoy cranberries. There will be Jell-O left over so have a container nearby to pour in the extra for snacking. When I made these this morning, my kids drank the pineapple juice over ice, so there was no waste.
