Description

A hint of Christmas flavour to an old fashioned (no bake) cookie!

Ingredients

  • ½ cups Table Cream
  • 2 cups White Sugar
  • ½ cups Salted Butter
  • 6 Tablespoons Cocoa Powder
  • 3 cups Large Flake Oats
  • 2 cups Sweetened Shredded Coconut
  • 1-½ teaspoon Peppermint Extract

Preparation

Put the cream, sugar, butter and cocoa into a pot. Bring to a rolling boil. Take off heat and add the oats, coconut and peppermint extract. Give it a good stir. Drop by the spoonful onto a baking seet lined with waxed paper or Silpat. Cool and them eat ‘em all up!

Ok, I’ll see what’s in our store. My other hurdle is that I’m in Spain for this batch so I might be using your “all coconut” advice. It’s always an adventure in the best way! I’ll let you know in two weeks :)

Hi! What i mean by large flake oats is not the quick oats or not the instant oats. hmmmm…I’m Canadian so I’m not sure how oats are packaged in the States. I would just use the oats that you get in the baking or cereal aisle. I’m sure they will work out fine. I don’t think I would use bran flakes for this recipe. Also you can just use all coconut if you wish. Good Luck!! Let me know how they turn out. : )

Those sound great! What do you mean my “large flake oats”? Would bran flakes work?

Delish! I used the Quaker Old Fashioned Oats and then squeezed the mix into balls. Great for the cookie drive!
