Description

These cookies are a favorite in our home. My husband can eat the entire batch (you heard me!) in less than a day! Soft, quick, easy, not overly sweet, and no rolling and cutting. Perfect!

Ingredients

  • ⅔ cups Crisco Shortening
  • ¾ cups Sugar
  • 1 teaspoon Vanilla
  • 1 whole Egg
  • 4 teaspoons Milk
  • 1-½ cup All-purpose Flour
  • 1-½ teaspoon Baking Powder
  • ¼ teaspoons Salt

Preparation

In large bowl, cream together Crisco, sugar, and vanilla. Add egg and milk. Beat until light and fluffy. In a separate bowl, sift together flour, baking powder, and salt. Add flour mixture to the sugar mixture 1/3 at a time until incorporated. Scoop onto a parchment-lined baking sheet by rounded teaspoons. (You can leave them alone, which is what I do, or you can press them down a bit.)

Bake at 375F for 8-12 minutes. It will depend on how big your scoops were. They will remain a light color. If they turn golden brown, they are over baked! Let cool for a minute or two on the baking sheet, then move to wire cooling racks. Once cool, top with your favorite frosting or icing.

And this recipe makes about 45 cookies (depending on how you scoop the dough) but I wasn’t able to put more than 36 in the servings tab.

Fot the frosting, I sifted 2 cups confectioner’s (powdered) sugar and added just under 1/4 cup milk. (start with less and add more as needed to thin it out.) You can add about 1 tsp of vanilla (or any other flavor extract) to it, along with food color. Beat with hand mixer until smooth. You want it to be thin enough to spread, but not so thin that it runs off of the cookies. I usually spoon it onto the cookies and spread with the back of the spoon.

Another variation-use lemon juice or zest to flacor the frosting.

Hi Angie –
What is the frosting that you used on this cookie? I would love the recipe – it looks yummy!

So delicious and easy to make! They stayed soft and chewy and got rave reviews when I made them for a cookout. I added almond extract but I’m sure they’d be good with just vanilla like the recipe says. I will definitely make these again!

Some of the best (if not THE best) sugar cookies I’ve ever made – and I’ve made alot! I love that the recipe calls for simple ingredients, and no rolling required. I used a small cookie scoop and only got 22 medium size
cookies:( But they were uniform in shape and size and flattened perfectly without any pressing. Will make again for sure – thank you!
