This is the BEST Cheese and Broccoli Soup ever!
No one needs to know how easy it is!
Tastes Exactly like “The Black Eye Pea” restaurant recipe!
Steam broccoli till tender-crisp.
Place half-and-half and water in a double boiler. (If you don’t have a double broiler, you can use a large metal bowl sitting on top of a large pot of simmering water. This stuff burns and sticks very VERY easily, so I wouldn’t risk cooking it straight in a pot over heat. Been there, burned that!)
Add cheese, salt and pepper.
Heat until cheese is melted.
Add broccoli.
Mix cornstarch and water in small bowl. Stir into cheese/broccoli mixture in double boiler and heat over simmering water until soup thickens.
Serve with a crusty bread and a salad.
PERFECTION!

Thank you for this recipe – I’ve also tried others that were not very good. Here were my variations (not much healthier, maybe, but I just can’t use Velveeta). I grabbed some Mexican Dipping Cheese (near the ricotta in the refrigerated section) because it melts in much the same way. Since it tastes a little differently, I also added some sharp cheddar to the cheese once the rest was melted. This melted quickly. Added the other ingredients and a little garlic and onion. Delicious!

This was good, and really easy. I used heavy cream and skim milk in place of the half-and-half, and it worked great. I also used frozen broccoli, lol. It was SUPER easy and very yummy, without being way too cheesy which was impressive considering the use of Velveeta. Thanks for a great recipe!!!

Wonderful! I’ve been looking for a broccoli cheddar soup recipe forever. Tried a copycat recipe earlier in the week and it was terrible. Yours was awesome. Totally a keeper recipe.

This is the very best broccoli & cheese soup I’ve ever tasted. I fixed last night for dinner and my 16 year old could not wait till 6pm to eat; we ate dinner at 4:45. Bought a round loaf of bread & made a bread bowl to serve in. Thanks for the recipe. This will be a regular cold weather soup & my house.
