Description

A rich, creamy, crunchy treat adapted from a family recipe. My mom made sugared walnuts every Thanksgiving and Christmas. This low carb makeover evokes those holiday memories for only a fraction of the carbs and calories. Perfect game day snacks, party treats, or low carb gifts. Suitable for Atkins, keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, low potassium, low sodium, CKD/Renal Diet.

Ingredients

  • ⅓ cups Nestlē Media Crema Or Unsweetened Condensed Milk (See Note)
  • 1 teaspoon Butter
  • ½ cups Swerve (Granular Erythritol)
  • ½ teaspoons Vanilla Extract
  • 1-¼ cup Shelled Walnut Halves (or Pecans)

Preparation

Line a small cookie sheet with parchment paper, set aside.

Heat crema and butter over medium heat until the butter is melted. Add Swerve and continue cooking over medium heat until Swerve dissolves and mixture comes to a full boil. Reduce heat a little bit, and continue cooking, stirring constantly, about 3 or 4 minutes.

Stir in vanilla until well incorporated. Add nuts and fold until all of them are well coated.

Pour out into parchment-covered cookie sheet, spreading to a single layer. Allow to completely cool on a wire rack.

Break up into bite size pieces and leave out to make sure all of the moisture has dried before packaging.

Yields about 2 1/2 cups of candied nuts, or 10 servings of about 1/4 cup each. Store in single serving snack size zip bags for grab-and-go snack or dessert. Or store in a covered container in the pantry.

Notes:
• These make nice gifts for diabetics and low carbers. Put into cute gift jars with bows on top for gift giving, and include a copy of the recipe.
• Nestlē Media Crema is a full fat unsweetened condense milk available in supermarkets that serve the Hispanic population, usually on the shelves with regular condensed milk in the baking section. It may also be ordered on Amazon, and should be available on Netrition by the end of April 2018. Do not confuse this product with Mexican “table cream” found in the refrigerated section. That is a sour cream substitute. I do not have a recommended substitute for the Nestlē Media Crema.
