Description

Delicious pizza for those on a low carb diet such as Atkins, South Beach or the GI diet.

Ingredients

  • FOR THE CRUST:
  • ⅔ cups Romano Cheese (or Other Hard Cheese)
  • ½ cups Low Fat Mozzarella Cheese (or Other Soft Cheese)
  • 6 ounces, weight Low-fat Cream Cheese
  • 4 whole Eggs
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Garlic Powder
  • _____
  • FOR THE TOPPINGS:
  • 1 cup Pizza Sauce
  • 1 cup Turkey Pepperoni
  • 1 cup Low Fat Mozzarella

Preparation

Grate the Romano cheese (or other hard cheese) and 1/2 cup mozzarella (or other soft cheese) cheese. Spread that on the bottom of a pizza pan (make sure to use one with sides) that has been sprayed with non-stick spray.

Next measure out the low fat cream cheese and put it in the mixer with the eggs, Italian seasoning and garlic powder and mix until smooth.

Pour the liquid mixture over the cheese on the pan.

Put that in a 350-degree F oven for 25 minutes.

Remove the ‘crust’ from the oven. It should be golden brown.

Spread it with your pizza sauce.

Load on the toppings. Use whatever toppings you want, as long as they are low carb. I used a mix of regular and turkey pepperoni, onions, green olives and mozzarella.

Sprinkle on the cheese.

Return to the 350-degree oven for another 10 minutes.

Remove and marvel at how good it looks.

Slice it and serve.

I gave the 3 stars below on my first try. The 2nd time I upped the cream cheese to 10 oz and left the rest the same and enjoyed it a lot better. Was less eggy and less salty.

also wanted to add my husband and all 6 kids wanted to eat my pizza over theirs. I gave them all bites and they loved it too. So even if you are not low-carbing, give it a try for something different!

I made this and eating it that night I was a little disappointed after having read the other reviews. It tasted pretty eggy and salty (from the cheese). It wasn’t preferable over regular pizza crust as others suggested. But, it wasn’t too bad either. I saved overs and ate them over the next few days – and eating the leftovers was better than when it was freshly made. Also, it didn’t get soggy from the sauce – so leftovers stayed good for several days. The egginess and saltiness seemed to be reduced and the toppings were enjoyed more. Overall, I would make it again for the purpose of a low carb diet. But, I would break down for a real pizza crust when I really want pizza.

This recipe is a winner! I just made it and really appreciate the texture of the ‘crust’. It was flavorful and satisfying. I’ll definitely be playing around with this recipe as I can see using the ‘crust’ in LC quiches and pot pies. THANKS for sharing! :)

My husband is on a low-carb diet. I think he’s supposed to be the cranky one without the carbs, but instead it’s made me cranky trying to make things our whole family can enjoy together for dinner. This pizza was really yummy, and my husband thinks I rock–win-win! I followed the recipe exactly for the crust and it turned out perfectly. We loaded it with toppings. I will say, the crust is not firm. I expected from looking at the picture that it would be. But that really didn’t bother us because it was so tasty. Overall a very satisfying dish!

I gotta say i was so impressed by this. It was delicious and definitely hit the spot when my carb loving Atkins diet self was craving pizza. I used a lot more cheese than the recipe called for and subsituted Parmesan for the Romano it called for and also sprinkled some bacon on top. This was awesome, my carb counter and I thank you!
