Description

A great summer gluten-free salad with watermelon, pistachios, bacon and feta cheese drizzled with a balsamic vinaigrette.

Ingredients

  • 1 whole (4-5 Lb. Size) Watermelon
  • 1 whole Red Onion
  • 2 Tablespoons Fresh Mint, Chopped
  • 2 Tablespoons Fresh Basil, Chopped
  • ½ cups Feta Cheese, Crumbled
  • 5 Tablespoons Bacon Crumbled
  • ⅓ cups Pistachio, Toasted And Chopped
  • ¼ cups Balsamic Vinegar
  • ½ cups Olive Oil
  • 2 teaspoons Dijon Mustard
  • 1 Tablespoon Honey

Preparation

Remove watermelon from rind and cut into bite-sized pieces. Place into a medium bowl.

Thinly slice the red onion and place into the bowl. Add chopped mint, basil and feta cheese, bacon and pistachios.

In a small bowl, whisk together the balsamic vinegar, oil, mustard and honey until combined.

To serve, place each serving on a plate and drizzle with balsamic vinaigrette.
